Skip the boring sandwiches and whip up this crunchy, velvety dip that makes healthy eating taste like a total cheat day.

If your morning toast routine is starting to feel a little uninspired, this vibrant avocado spread is exactly what you need to shake things up. By blending rich, ripe avocado with a scoop of smooth cream cheese and a squeeze of fresh lemon, you get a luxurious base that feels incredibly indulgent but keeps things totally nutritious.

Here’s what you need: 2 ripe avocados, 3.5 oz (100g) of cream cheese, 1/2 of a sweet bell pepper, 1 medium fresh cucumber, a small bunch of fresh basil (about 15g), 1/2 of a lemon, 2 garlic cloves, with salt and black pepper to taste.

To get started, slice your ripe avocados in half, pop out the stones, and scoop all the rich, green flesh straight into a medium mixing bowl. Use a sturdy fork to mash the avocado down until it forms a relatively smooth, soft puree.

Immediately squeeze the juice of your half lemon right over the mashed avocado, then sprinkle in a good pinch of salt and black pepper. Give it a quick stir — the lemon juice keeps the green vibrant and stops it from turning brown. Drop the cream cheese into the bowl and mix vigorously until everything is beautifully combined and velvety.

Next, finely chop your fresh basil leaves and add them to the mix. Take your fresh cucumber and half bell pepper, slice them into neat, tiny cubes, and toss them in for that signature fresh crunch. Finally, crush your garlic cloves through a press straight into the bowl.

Give the entire mixture one last thorough stir so the crunchy veggies and garlic are evenly distributed throughout the creamy base. Slather it generously over a warm slice of rye, whole grain, or sourdough bread, or just dive in with some crackers.
