A Simple, One-Skillet Chicken Dinner That’s Packed with Rich Veggie Sauce
All you need is chicken, some vegetables and a little bit of wine.
When life makes us rush in between work tasks and house chores, we all want something simple but rich in taste for dinner at the end of the day. Luckily, the social media has a huge variety of recipes that don’t require special ingredients or a lot of time for preparation.
This recipe for the most delicious chicken accompanied by vegetable sauce is one of those you might want to keep close — it’s very likely you’ll be cooking it at least a couple times per week.
Ingredients: 310 g of chicken thigh fillets, 150 g of red bell pepper, 150 g of yellow bell pepper, 160 g of onion, 2 cloves of garlic, 80 g of tomato paste, 200 ml of broth, 30 ml of ready-made mustard, 30 ml of dry white wine, 1 tsp of ground paprika, ¼ tsp of dried chili flakes, 1 tsp of salt, 0.5 tsp of ground black pepper, 30 ml of vegetable oil.
First, cut the chicken thigh fillets into strips across the fibres and place them in a bowl. Add salt, black pepper, paprika, and dried chili flakes, then toss to coat the meat evenly with the spices.
Cut the onion into thin strips and finely chop the garlic. Cut the bell peppers of both colors into large cubes, about 2×2 cm.
Heat the vegetable oil in a pot or frying pan. Add the chicken and fry over medium heat, stirring, for about 3 minutes until lightly browned. Add the onion, stir, and cook for another 2 minutes. Then add the bell peppers and garlic, and continue to cook, stirring, for about 3 minutes.
Pour in the white wine, add the tomato paste, mustard, and broth. Mix everything thoroughly, cover, and simmer for about 20 minutes.
Serve the dish hot with rice, mashed potatoes or any other garnish you prefer.
