We all know that rice is a universal garnish that can be served with any type of meat, fish or vegetables, though sometimes the ordinary rice becomes too dull to prepare at once again.

If you wondered whether you can turn the simple rice into something exquisite and unusual, look no further — this recipe for the authentic Mexican red rice is exactly what you need.

Ingredients: 1 cup of rice, 3 tbsp of vegetable oil, 2–3 large garlic cloves, 1 onion, hot pepper (to taste), 400-450 ml of broth or water, 150-200 ml of tomato sauce, salt (to taste), ground cumin (to taste), fresh herbs (to taste).

Measure out the vegetable oil into a saucepan. Heat the oil over medium heat and add the rice.

Stirring constantly, sauté the rice for a few minutes until the grains turn golden and crispy.

Add the chopped onion and hot pepper. Continue frying everything together until the onion is soft (about 5–7 more minutes).

Add the chopped garlic. Stir the mixture and fry everything together for about another minute.

Pour in the chicken broth and tomato sauce.

Bring the broth to a boil, then add spices to taste. Cover the pot with a lid, reduce the heat to low or just below medium, so the liquid simmers gently. Cook the rice for 20–25 minutes, until all the liquid is absorbed. By this time, the rice will be fully cooked but will remain loose.

Once ready, fluff the Mexican red rice with a fork, sprinkle with chopped fresh herbs, and serve.
