Better Than Cheesecake: This High-Protein Yogurt Soufflé That Exceeds All Expectations

You might be a huge fan of all the desserts they have in that local bakery, but it’s also true that every so often there’s a need for something new and preferably made at home.
Well, the good news here is that you can make the easiest and at the same time most delicious soufflé right in your kitchen and using the simplest ingredients. Just try it once, and you won’t be able to stop baking this tender sweet treat.
Here’s what you need: 4 eggs, 350 g of yogurt, 3 tbsp of sugar, 3 tbsp of cornstarch, 1 tsp of baking powder, powdered sugar to taste, raisins (optional).
Separate the egg whites from the yolks. Add sugar to the yolks and mix until the mixture is light and smooth. Then add the cornstarch and baking powder, mix again, and pour in the yogurt, stirring until the mixture is smooth.
Beat the egg whites until stiff peaks form, then gently fold them into the batter, taking care to preserve the light, airy texture.
Line a baking pan with parchment paper, pour in the dough, and smooth the top. Bake in an oven preheated to 170°C for about 30–40 minutes, or until done.
Take out the finished cake, carefully remove the parchment paper, let it cool slightly, and, if you like, sprinkle with powdered sugar before serving.
