Just remember that the only thing you have to take care of is gentle browning of milk powder in a dry pan — this will bring you a complex, nutty flavor and a striking amber color that rivals any slow-cooked confection.

Ingredients: 40 g of skim milk powder, 250 ml of milk, 1 tsp of cocoa powder, 1 tbsp of cornstarch, sweetener to taste, a pinch of salt.

Pour the skim milk powder into a dry skillet and toast it over low heat until it turns a beautiful golden brown. The key is not to burn it, or it will taste bitter.

In a saucepan, combine the milk, cocoa, cornstarch, sweetener, and a pinch of salt. Add the toasted skim milk and stir well.

Cook the mixture over low heat, stirring constantly, until it becomes thick and creamy.

Pour the caramel into a jar and let it cool — it will thicken even more after chilling in the fridge.
