Even though summer is still a couple of months away, there’s no reason to resist the first “summer” desserts, especially if the weather tells you to go and enjoy the sun on a terrace.

This kind of activity will become even better if you bring this delicious berry pie — made of the simplest ingredients, it’s also very easy to make in your own kitchen. Make sure you save this recipe for the next time you hang out with your friends in the open air.

Ingredients: 50 g of butter, 50 g of sugar, 2 eggs, a pinch of salt, 100–130 g of flour, 1 tsp of baking powder, 300 g of berries, 500 g of sour cream, 150 g of sugar, 100 ml of water, 10 g of gelatin.

Put soft butter and sugar in a bowl, beat with a mixer, then add the eggs and mix well again. In a separate bowl, combine the flour and baking powder, then gradually add to the dough and knead until smooth. Line the baking pan with parchment paper, pour in the batter, and spread it evenly.

Place in an oven preheated to 180°C and bake for 10–12 minutes. Remove the finished cake layer and let it cool completely. While the cake is cooling, prepare the gelatin: dissolve it in hot water according to the instructions. In a separate bowl, mix the sour cream with sugar, then pour in the gelatin and mix well.

Add the berries (use any kind, fresh or defrosted) and gently fold them in. Pour the mixture onto the cooled cake layer. Place the cake in the fridge for about 4 hours so that the filling sets well. Then take it out, remove it from the pan, slice it, and serve. It turns out to be a very delicate, refreshing dessert with a pleasant berry sourness.
