Extra Fluffy Pancakes You Won’t Gain Weight From: Here’s the Secret Ingredient

This recipe might become a life-saver for those sticking to healthy habits.

It’s important to track everything you eat throughout the day, but it’s also important to reward yourself with something delicious after you’ve achieved another healthy milestone.

This reward, however, can also be made with “healthy” ingredients, and you probably won’t want to miss out on making these fluffy and protein-rich pancakes. More than that, they only require the simplest ingredients you likely already have in your fridge.

Here’s what you need: all-purpose flour, baking powder, salt, low-fat Greek yogurt (that secret ingredient for extra fluffy pancakes!), milk, eggs, blueberries, honey or maple syrup, vanilla extract, light olive oil or butter.

First, mix all the wet ingredients (the yogurt, milk, eggs, honey (or maple syrup), and vanilla) until it’s all smooth. Here you can also add lemon zest, but it’s not necessary. Then, blend in dry ingredients (the flour, baking powder and salt), whisking it all until smooth and fluffy. Add blueberries and mix again (you can also add them to each pancake separately while in the pan).

For the pancakes, choose a non-stick skillet and let it heat properly before cooking. Add a little bit of olive oil and spread it all over the skillet with kitchen paper. Lower the heat to medium and start pouring the batter (approximately ¼ to ⅓ cup for each pancake), cooking 3 to 4 minutes per side.

When cut in half, the pancakes should be fully cooked inside; if they burn too quickly, adjust the heat.

For better taste, keep the cooked pancakes in the oven at 120°F (50°C) for several minutes, then serve them with a maple syrup or any other topping you prefer.
