If you’re totally over making the same old cakes and cookies every weekend, you’ve got to try this awesome sweet-tooth shortcut. Instead of throwing together a standard dough, you just bake a soft cookie slab, slather it in a super-rich mix of whipped cream and tangy cream cheese, and pile it high with whatever fresh fruit you have lying around. It’s an absolute game-changer for a lazy Sunday afternoon or a casual family hangout.
Here’s what you need: 180 g of butter, 400 g of granulated sugar, 1 packet of vanilla extract, 200 g of flour, salt to taste, ½ teaspoon of baking powder or baking soda, 1 teaspoon of cornstarch, 230 g of cream cheese, 30 g of heavy cream, fruit to taste.
Cream filling: whipped cream + sour cream, or cream cheese.
Place the butter (120 g) in the mixing bowl, mix for one minute, then add the sugar, egg, and half the vanilla extract.
In a separate bowl, combine the flour, baking soda, and cornstarch. Add this mixture to the mixing bowl in small portions. Then cover with plastic wrap and place in the fridge for 30 minutes.
After it has cooled, remove the dough, grease the pan with butter, and spread it out in an even layer. Bake at 175°C for 20 minutes.
Let the cake cool, then refrigerate for another 15 minutes.
Place the cream cheese and remaining butter in the mixer bowl, beat for 2–3 minutes, then add the sugar, heavy cream, and vanilla extract. Mix for 1–2 minutes.
Slice the prepared fruit into thin slices, then spread the cream on the base and top with the fruit.
