No need to look for a Chinese grocery store — all the ingredients are simple enough to be found in the one nearby.

It often happens that the comfort food we’re used to suddenly feels and tastes dull while a crave for something new and exotic comes in. Well, there’s a huge variety of recipes that correspond to this description, and the Chinese chicken chow mein is definitely one of those.

Unlike many other dishes of the country’s cuisine, this one is easily cooked within half an hour, so consider surprising your family with an exotic kind of dinner tonight.

Ingredients: 200 g of chicken breast, 2 tbsp of olive oil, 1 tbsp of sesame oil, 2 cloves of garlic, 1 bell pepper, 5 button mushrooms, chili pepper to taste, 3 tbsp of soy sauce, noodles.

Boil the noodles, drain the water, rinse under cold running water for best results, then drain well.

Rinsing the noodles with cold water stops the cooking process and prevents them from sticking together. Once drained, the noodles will better absorb the flavors of the sauce and vegetables.

In a separate pan, heat olive and sesame oil and fry the meat, onion, and garlic for 5–6 minutes. Remove the meat, then fry the carrots, bell peppers, green onions, and mushrooms in the same oil. Add the soy sauce, meat, and noodles, and stir-fry everything together for about 3–4 minutes. Serve immediately.

When frying the meat, make sure it doesn’t dry out, the heat should be medium. Add the vegetables when they’re ready to “color” the oil with their juices; this will enrich the dish’s flavor. Add the soy sauce at the end so that it doesn’t dominate the flavor of the other ingredients.
