Here’s what you need: 1 egg, 80 g of banana, 20 g of rice flour or regular flour, 25 g of cocoa, 3 g of baking powder, 130 ml of 2.5% milk, 320 g of 5% soft cottage cheese, 10 g of gelatin, 50 ml of water, sugar substitute to your liking.
Mash the banana with a fork, add the egg, milk, rice flour, cocoa, and baking powder, and mix well until smooth. Pour the mixture into a 16 cm diameter baking pan and cook in the microwave on high power for 6–7 minutes, then cool completely.
Soak the gelatin in water, heat until dissolved, without bringing to a boil. Combine the cottage cheese with milk, cocoa, sugar substitute, and gelatin, and beat with a blender until fluffy.
Cover the pan with plastic wrap, place the cake layer on top, spread the cottage cheese filling on top, and place in the fridge for at least 3-4 hours until firm.
