From Sandwiches to Salads: The Addictive Thai Egg Hack You’ll Use Every Day
After this recipe, you’ll never cook eggs in any other way.
It’s safe to say you’ve tried fried eggs at least a couple times in your life, but you likely never heard about the way they do it in Thailand. Despite its simplicity, the recipe offers a really unique taste that goes well with whatever type of meat or garnish you serve, especially thanks to that sweet, salty and spicy sauce.
Here’s what you need: 2 onions, vegetable oil for deep-frying (enough to cover the eggs in your pan), chili pepper and smoked paprika (to taste), 10 hard-boiled eggs, 4 cloves of garlic, 100 ml of soy sauce, 150 g of sugar, 1 bunch of cilantro.
Finely chop the onion and garlic, remove the seeds from the chili pepper, and slice it into half-rings. Heat the oil in a deep pan and quickly brown the onion, garlic, and chili pepper until they’re slightly crispy, then transfer them to a paper towel.
In the same oil, fry the peeled eggs until golden brown, just a few minutes. Let the excess oil drain off and cut them into quarters.
Separately, heat the soy sauce with sugar and paprika until dissolved; this creates a thick, glossy sauce. Mix the eggs with the fried vegetables and herbs, then pour the sauce over the top.
