Even though most of us immediately think of tacos and crispy quesadillas when we crave Mexican food, the local home-style cooking has so much more to offer when it comes to cozy comfort meals.

Luckily, preparing this rich Pozole soup at home is surprisingly simple and requires very little effort — just simmer the meat with aromatic spices and corn for a while to get a hearty dinner you’ll definitely want to repeat.

Ingredients (for 6 portions): 500 g of pork (can be replaced with chicken), 2 cans of white corn for pozole or 500 g of soaked dried corn, 2 liters of water, 1 large chopped onion, 4 cloves of minced garlic, 1 tbsp of salt, 2 tbsp of chopped oregano, 2 ancho chili peppers, soaked and chopped (can be substituted with regular chili peppers), lime (cut into wedges for serving), radishes (thinly sliced for serving), fresh cilantro for serving.

Place the meat in a large pot, add water, onion, garlic, and salt. Bring to a boil, reduce the heat, and simmer for 2–3 hours.

When the meat is tender, add the corn and oregano. Continue simmering for about another hour.

In a separate skillet, fry the ancho chili paste to release its aroma, then add it to the soup.

Serve the pozole hot, garnished with lime slices, radishes, and fresh cilantro.
