How to Make the Creamiest Scalloped Potatoes That Melt in Your Mouth

Here’s what you need: 1.5 kg of potatoes, 500 ml of 33% heavy cream, 200 g of hard cheese (Cheddar), 1 onion, 2 cloves of garlic, salt and pepper to taste, 0.5 tsp of nutmeg.
To prepare the potatoes, peel and slice them into 2–3 mm-thick slices, then immediately place them in cold water to prevent discoloration.
Prepare the sauce: fry the onion and garlic in oil until translucent, add the cream, salt, pepper, and nutmeg, and simmer for 5 minutes until thickened.
Assemble the dish: layer the potatoes in a baking dish, alternating with the sauce and cheese; top with a layer of cheese.
Bake at 180°C for 60 minutes until golden brown. Let it rest for 15 minutes before serving.
Bonus tip: It’s best to use low-starch potato varieties for this dish since they hold their shape when baked. The sauce should be thick; 33% fat cream prevents it from separating.
