Ingredients: 2 carrots, 2 fresh celery stalks, 2 white onions, 2 garlic cloves, 3 tablespoons of olive oil, 2 chicken bouillon cubes, 400 g of tomatoes in their own juice, 6 tomatoes (any kind), 4 fresh basil leaves, 1.5 liters of water.
Peel and chop the carrots, celery, onion, and garlic. Cook the vegetables in a pot over medium heat in olive oil, covered, for 15 minutes, until tender.
Dissolve the bouillon cubes in water. Add the broth, chopped fresh tomatoes, and canned tomatoes to the pot with the vegetables. Bring to a boil and simmer for 10 minutes with the lid on.
Remove the pot from the heat, and season with salt and pepper to taste. Purée the soup with a blender, and garnish with basil when serving.
