Juicy Fish & Veggie Dinner with Zero Cleanup: The Foil Packet Pollock Secret

If you’ve never been a fan of fish until now, you’ll definitely change your mind after this recipe.

When it comes to preparing some kind of fish at home, many put the idea away for as long as possible, since it seems like fish is way more delicate than meat. However, you just need to find a right recipe to find out that fish like pollock can be prepared just like in an haute-cuisine restaurant within half an hour in your own kitchen.

The secret to the perfectly baked pollock is making it while using foil packets, so make sure you have those stocked in your house.

Ingredients: 500–600 g of pollock fillet, 1 large tomato, 1 bell pepper, 1 onion, 1/2 of a lemon, 2 cloves of garlic, 2–3 tbsp of olive or vegetable oil, salt, black pepper, dried and fresh herbs.

Defrost the pollock beforehand and dry it thoroughly so the fish doesn’t release excess water. Then season with salt and pepper and lightly drizzle with lemon juice.

Slice the onion into thin rings, and cut the bell pepper and tomatoes into small pieces. Shape the foil into individual boats with small sides.

Place the onions and bell peppers on the bottom, then arrange the pollock pieces on top. Next, add the tomatoes, garlic, a slice of lemon, and a little oil. You can sprinkle dried herbs on top.

Lightly cover the boats to trap the steam inside, then bake in the oven for about 25 minutes at 200°C.
