When it comes to desserts, the variety of tastes makes us satiated enough to crave for something light and not too sweet. This coconut dessert is the perfect definition of a creamy sweet treat that will conquer your heart as soon as you get the first taste.

Apart from that, the recipe doesn’t require exotic ingredients and actually implies that everyone can make the most perfect coconut dessert (with no oven needed).

Ingredients (for 4 portions): 400 ml of coconut milk (better if thick, with high fat content), 150 ml of heavy cream (33–35% fat), 80 g of sugar (you can use brown sugar for a caramel flavor), 30 g of cornstarch, 1 teaspoon of vanilla extract or a packet of vanilla sugar, 50 g of coconut flakes + a little extra for garnish, 100–150 g of fresh berries (raspberries, strawberries, blueberries etc.), 1 tsp of lemon juice (optional, for a fresher taste).

In a small bowl, combine the cornstarch with 50 ml of coconut milk and stir thoroughly until smooth. It’s important to make sure there are no lumps, as they will ruin the cream’s smooth texture.

In a medium saucepan, combine the remaining coconut milk, heavy cream, and sugar. Place over medium heat and heat slowly, stirring constantly with a whisk to prevent the mixture from burning. As soon as it begins to bubble slightly around the edges, carefully pour in the prepared starch mixture, stirring continuously. The cream will thicken gradually and take on a silky texture.

Add the vanilla extract and 30 g of coconut flakes. Stir to combine. If you like, you can add a pinch of salt; it will enhance the sweetness and aroma.

Pour the cream into small cups, glasses, or dessert bowls. Let it cool at room temperature for 10–15 minutes, then put it in the fridge for at least 2 hours. By this time, the dessert will stabilize and become firm and creamy.

Before serving, lightly toast the remaining coconut flakes in a dry skillet until golden brown; they’ll become crispy and fragrant. Garnish the dessert with fresh berries, drizzle with lemon juice for a refreshing flavor, and sprinkle with the warm coconut flakes.
