It’s no secret that the Italian cuisine has conquered the world and keeps doing so even today, with many people coming up with more and more recipes for delicious pasta inspired by the country’s classic meals. Those also include the iconic pesto pasta, though quite few opt for making the pesto at home rather than getting it from the store.
However, the homemade pesto is much easier to make than you think, so save this recipe for the most delicious and authentic Italian dinner you’ll ever have.
Ingredients: 300 g of fusilli pasta, 150 g of ricotta, 25 g of Parmesan, 30 g of mint, 20 g of basil, 1 clove of garlic, 2 tbsp of pine nuts, 85 ml of olive oil, salt and black pepper to taste, pine nuts and Parmesan cheese for serving.
Place the mint and basil leaves in a blender, add the Parmesan, garlic, pine nuts, and most of the olive oil, then blend until smooth. Season with salt to taste.
Next, add a little olive oil to the ricotta and whisk until it becomes a light, fluffy cream.
Cook the pasta until al dente, then drain the water, reserving a little of the cooking liquid.
Put the pasta back in the pot, add the pesto, and gradually pour in the reserved cooking liquid, stirring to make the sauce smoother and creamier.
Divide the pasta among plates, top with the whipped ricotta, and sprinkle with black pepper, pine nuts, and grated Parmesan.
