When it comes to deciding what kind of dish to make using cabbage, it’s German cuisine that first comes to mind. It’s no secret that the country is famous for all those variations of cabbage meals, with the main ingredient prepared in all sorts of ways.

Well, this recipe for Germany’s traditional choucroute might be what you’ve been looking for — the cabbage mixed with spicy sausages and vegetables is perfect for home dinner.

Here’s what you need: 1 small head of young cabbage, 300 g of smoked sausages or hunter’s sausages, 150 g of smoked brisket or bacon, 1 onion, 1 carrot, 2 cloves of garlic, 1 tablespoon of tomato paste, 1 teaspoon of paprika, 1/2 teaspoon of cumin, 1 teaspoon of sugar, salt, black pepper, 1–2 tablespoons of vegetable oil.

Cut the bacon into pieces and place them in a skillet. Once the aromatic fat has rendered, add the onions and carrots, and fry until soft and lightly golden. Then add the sliced sausages to the skillet and brown them lightly.

Finely chop the young cabbage and add it to the smoked meats. Add the tomato paste, paprika, cumin, sugar, minced garlic, salt, and pepper. Mix everything well, cover, and simmer over low heat for about 25–30 minutes.
