If you think you’ve already tried all the possible variations of potato dishes, wait before you discover the pure Spanish classic snack called croquettes. Prepared with all kinds of filling, these potato balls turn out crispy outside and tender inside, thus becoming the best snack you can easily prepare in your own kitchen.

Ingredients: 3 potatoes (the largest ones), 1 package of button mushrooms or any other mushrooms, 1 onion, 1 egg, 2-3 tablespoons of flour (adjust as needed so the dough is easy to shape), 50 g of cheese (optional), salt, black pepper, vegetable oil (enough for deep-frying), breadcrumbs.

Boil the potatoes until tender and mash them. Finely chop the mushrooms and fry them with the onion until golden brown, so that excess moisture evaporates and a rich aroma develops. Then mix the mushrooms with the potatoes, add an egg, a little flour, salt, pepper, and grated cheese if you like.

Shape the mixture into small croquettes — round balls or oblong shapes. Coat them in breadcrumbs and fry in a skillet until they have a nice golden crust on all sides.
