There are no complicated techniques or hard-to-find components here; it relies entirely on a few ultra-fresh, cheap ingredients that you probably already have in your kitchen.

Here’s what you need: 500 g of tomatoes, 1 red onion, 150 g of feta cheese, 4 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 teaspoon of honey, 1 teaspoon of Dijon mustard, 1 clove of garlic, 0.5 teaspoon of dried oregano, salt, ground black pepper to taste.

Cut the tomatoes into large slices or chunks. Slice the red onion into thin half-rings. Break the feta into large pieces with your hands or cut it into cubes.

For the dressing, combine the olive oil, lemon juice, honey, Dijon mustard, pressed garlic, oregano, and a pinch of freshly ground pepper. Whisk well with a fork or small whisk until smooth.

Place the tomatoes, onion, and feta in a salad bowl. Pour the dressing over the salad and gently toss, being careful not to crumble the cheese. Let the salad stand for 5–10 minutes, then serve.
