When it comes to treating yourself to an elegant berry dessert, you don’t need to spend hours over fussy, heat-heavy baking. Luckily, transforming simple summer strawberries and rich cream into a silky masterpiece is as easy as it gets — just a smooth, cloud-like texture and a burst of fresh strawberry flavor in every cool spoonful.

Here’s what you need: 25 g of gelatin (instant), 200 ml of heavy cream (20–33% fat), 100 ml of milk, 1 tsp of vanilla sugar, 1 tbsp of sugar, strawberries to taste.

Pour the cream and milk into a saucepan, then add the sugar and vanilla sugar. Place over medium heat and warm up, stirring constantly, until it begins to simmer. Do not bring to a boil.

Remove the mixture from the heat and let it cool slightly.

Prepare the gelatin according to the package instructions. If using instant gelatin, pour a small amount of hot (but not boiling) milk mixture over it and stir thoroughly until completely dissolved.

Pour the dissolved gelatin into the main cream and milk mixture and stir well until smooth.

Pour the mixture into dessert bowls, glasses, or molds. Leave to cool at room temperature, then place it in the fridge for at least 2 hours until completely set.

Before serving, top with sliced fresh strawberries or strawberry purée.
