Ingredients: 300 g of chicken breast, 80 g of spinach, 20 g of parsley, 1 orange, 1 hot red chili pepper, 1 clove of garlic, 1/4 tsp of salt, 1/3 tsp of ground black pepper, 80 ml of olive oil.
Thoroughly wash the spinach and parsley, rinse the orange with soapy water. Finely chop the garlic and parsley, remove the seeds from the hot pepper, and finely chop it as well. Place all these ingredients in a mixing bowl, pour in the olive oil, then blend with an immersion blender until smooth.
Cut the chicken breast into small pieces, place them in a bowl, and add the marinade from the blender. Mix thoroughly and let it marinate in the fridge for 1 hour. Next, fry the chicken pieces in a skillet with the olive oil from the marinade over medium heat until they develop a light golden crust, then place them on a sieve to drain off the excess oil.
Peel the orange and cut the pulp into small pieces. Arrange the spinach leaves on a flat plate, top with the chicken, then the orange. Season the salad with salt and black pepper to taste and serve immediately.
