Pizza Muffins Are a Fun and Fast Twist on the Classic Slice
Skip rolling out heavy dough by tossing diced ham, melted cheese, and fresh veggies right into a quick, pourable batter instead.
These savory bites pack all the comforting flavors of your favorite pizza into portable, fluffy treats. They come together in just 20 minutes, making them a stress-free addition to any family picnic or busy workday.
Ingredients: 2 large eggs, 1 tablespoon of sour cream, 3 tablespoons of milk, ½ teaspoon of salt, 2 tablespoons of all-purpose flour, 3.5 oz (100g) of sausage or ham, 3.5 oz (100g) of shredded cheese, and fresh herbs or extra toppings (like bell peppers, olives, or marinated mushrooms) to taste.
Cut your sausage or ham into small, neat cubes. If you are using optional extras like bell peppers, olives, or mushrooms, chop those into small pieces as well. Grate your cheese and finely mince the fresh herbs.
Whisk the eggs in a mixing bowl, then stir in the milk, sour cream, salt, and flour. Mix everything together thoroughly until you have a smooth, lump-free batter.
Dump the diced meat, shredded cheese, chopped herbs, and any extra toppings straight into the bowl with the batter, stirring well to distribute everything evenly. Spoon the mixture into greased muffin cups.
Bake in an oven preheated to 200°C (400°F) for just over 15 minutes until the muffins are fully set and beautifully golden on top. Serve them warm out of the oven or let them cool completely for an easy grab-and-go snack.
