When summer arrives, craving a light, fruit-filled pastry is completely natural, but spending hours kneading sticky dough or waiting for yeast to rise in a hot kitchen is likely the last thing you want to do. If you are looking for a clever shortcut to sweeten your family weekend, this brilliant recipe transforms ordinary thin flatbread into beautiful, individual dessert cups.

Here’s what you need: 60 g of thin flatbread (lavash), 200 g of soft cottage cheese or quark, 120 g of fresh seasonal berries, 1 ripe banana, 1 egg, 40 g of sugar, a pinch of cinnamon and nutmeg.

To put this together, start by cutting your flatbread into small circles that are slightly larger than the wells of your muffin pan. Gently press each piece down into the cups to form stable, neat little baskets.

Next, toss the soft cottage cheese, egg, banana, sugar, and spices into a bowl and blend the mixture until it turns into a completely smooth, silky cream. Gently fold in most of your fresh berries with a spoon, saving a small handful for later. Spoon the filling generously into your prepared baskets, scatter the remaining whole berries on top for a vibrant finish, and bake at 180°C for about 25 to 30 minutes until the edges turn beautifully golden and crisp.

Make sure to let the baskets cool completely in the pan so the creamy center sets perfectly before serving them alongside a fresh cup of morning coffee or evening tea.
