Have you ever wondered what kind of magical products they put in Rafaello to make those coconut balls this tasty? Well, we can’t know for sure, and for some that might be a big problem.
However, it can be solved just as easily with this recipe for home-made Rafaello — unlike those you usually get in grocery stores, these are made with “healthy” ingredients and will likely taste even better than the original ones.
Here’s what you need: 125 g of coconut flakes + up to 30 g for sprinkling, 200 g of powdered milk, 120 g of butter, 100 g of sugar, 60 ml of water, 50 g of raisins or almonds.
In a saucepan, combine the water and sugar, and heat until the sugar is completely dissolved, without bringing it to a boil.
Remove from the heat and add the powdered milk and 100 g of shredded coconut; stir thoroughly or whisk until smooth.
Let the mixture cool, then place it in the fridge for 1–2 hours.
Form small patties from the cooled mixture, place a raisin or a nut in the center of each one, and roll into a ball.
Roll in the remaining shredded coconut and serve.
