The 15-Minute One-Pan Japanese Comfort Food You Can Make with Just Chicken and Eggs

Even though most of us associate rich, authentic Japanese cuisine with complex culinary techniques and exotic ingredients, creating a deeply comforting meal in your own kitchen is actually surprisingly effortless.

However, this savory combination of tender chicken, a velvety sweet-and-savory omelet, and fluffy hot rice is quite easy to achieve at home, transforming your normal dinner into an haute-cuisine mealtime without having to go out to a restaurant.

Ingredients: 300 g of chicken breast, 1 onion, ½ cup of rice, 3 eggs, 6 tablespoons of soy sauce, 2 tablespoons of sugar, 20 g of green onions.

Rinse the rice and boil it until tender. Peel the onion and slice it into thin half-rings.

Pour the soy sauce into a skillet and heat over medium heat. As soon as the sauce begins to boil, add the onion and sugar. Stir and cook for 2–3 minutes, until the onion is tender.

Cut the chicken breast into small pieces. Add the chicken to the pan with the onion and cook for a few minutes, stirring gently, until the meat is completely white.

Crack the eggs into a bowl and lightly beat with a fork or whisk until smooth.

Pour the egg mixture into the pan, spreading it evenly over the chicken and onions. Cover the pan with a lid and cook for 3–4 minutes. The omelet should set but remain tender inside.

Finely chop the green onions.

Spoon the hot rice into a deep plate or bowl. Carefully place the omelet with the chicken and onions on top. Sprinkle the dish with green onions and serve immediately.
