The 3-Ingredient Glaze That Turns Ordinary Carrots Into a Gourmet Side Dish
The healthiest (and probably the most delicious) garnish to any kind of meat.
Even though we’re all likely used to choosing potatoes or rice as the most frequent side dish, sometimes the need to bring some diversity into our food routine comes along.
This is where the recipe for roasted carrots can come in handy — extremely easy to make, the garnish actually turns out a little bit sweet and tender, so consider preparing it even if you’re not a big fan of carrots.
Here’s what you need: about 1 kg of carrots, 1 tablespoon of olive oil, salt and black pepper to taste, fresh parsley for garnish (optional).
Preheat the oven to 425°F (about 220°C).
Wash the carrots (no need to peel them). Cut them crosswise into pieces about 2 inches (about 5 cm) thick. If the carrots are very thick, cut them lengthwise into 2 pieces.
Place the sliced carrots in a large bowl. Add the olive oil, salt, and pepper, and toss to coat the carrots evenly.
Spread the carrots in a single layer on a baking sheet lined with parchment paper.
Bake for 15–25 minutes, until the carrots are tender and lightly browned, but not mushy.
If you like, sprinkle the dish with fresh parsley.
