A rich and savory walnut dressing elevates basic crisp vegetables into a true restaurant-quality side dish.

When warm weather arrives, finding a side dish that feels incredibly fresh yet deeply satisfying can elevate any simple dinner. While it is easy to get tired of standard oil-and-vinegar dressings, this vibrant combination will let you enjoy your seasonal greens in a completely different way. Apart from that, the whole process takes only a few minutes.

Here’s what you need: 2 cucumbers, 1 red onion, 30–50 g of walnuts, 1 lime (juice), a small bunch of parsley, 1 tablespoon of olive oil, 1 tablespoon of Greek yogurt or sour cream.

Wash the cucumbers and slice them into rounds, half-moons, or large cubes. Peel the red onion and slice it into thin half-rings.

For the dressing, place the walnuts in a blender. Add the lime juice, parsley leaves, olive oil, and Greek yogurt or sour cream. Blend everything until smooth.

Place the prepared vegetables in a salad bowl, pour the nut dressing over them, and gently toss.

Serve the salad immediately after preparation. Garnish with herbs or sprinkle with additional chopped walnuts, if you like.
