While supermarket versions are often packed with artificial thickeners and excessive corn syrup, nailing the authentic recipe at home gives you a silky, gorgeous glaze that instantly elevates simple stir-fries, weeknight chicken, grilled salmon, or a basic bowl of rice.
Here’s what you need: ½ cup (120ml) of sake, ½ cup (120ml) of mirin (sweet rice wine), ½ cup (120ml) of soy sauce, and 4 tablespoons (60g) of sugar.
