Ingredients: 500 g of salmon or salmon fillet, 1 medium onion, 200–300 g of potatoes, 200 ml of milk, 100 ml of heavy cream, 30 g of butter, 3 tablespoons of flour, green onions, freshly ground black pepper, salt, cheese and fresh dill for serving.
Make a broth from the fish, remove the fish, flake it off the bones (if any), and set it aside.
Peel the potatoes, cut them into small cubes, and cook them in the broth for about 15 minutes.
Finely chop the onion and green onions. Melt the butter in a skillet and fry the onions until soft. Add the flour and cook for about 2 minutes. Pour in the cream and milk, stirring to avoid lumps.
Pour the cream sauce into a pot. Puree the soup with a blender, season with salt and pepper.
Before serving, pour the soup into bowls, place a portion of fish in each, and sprinkle with cheese and fresh dill.
