It’s no secret that pancakes have been breakfast classic for quite some time, though many might argue that making those constantly can become a little bit annoying.
Well, you might change your mind after giving a try to these coffee and cocoa pancakes that taste like heaven — and way better than the original ones. The simplest ingredients are required, so check whether you already have them in your kitchen.
Here’s what you need: 250 ml of yogurt, 1 egg, 2–3 tbsp of sugar, 1 tsp of instant coffee, 1 tbsp of cocoa, 180–220 g of flour, ½ tsp of baking soda, a pinch of salt, vegetable oil for frying.
Add coffee and cocoa to the yogurt, stirring well to remove any lumps. Beat in the egg, add the sugar and a pinch of salt, and mix until smooth.
Then add the baking soda and gradually stir in the flour — the batter should be thick but soft, like sour cream. Let it stand for 5–7 minutes.
Heat a skillet with a little oil and spoon the pancakes into it. Cook over medium heat until golden brown on both sides. Serve immediately — these are especially tender and fragrant when warm.
