The German Potato Salad Secret That Completely Surprises Foreign Home Cooks

After this recipe, you’ll forget about the mayonnaise and why you even used it in the first place.

When it comes to preparing salads, some might opt for a lighter dressing like olive oil and herbs, while others would rather go with something like sour cream or even mayonnaise. Well, nothing like this happens in Germany where they serve salads with their own marinade that makes the country’s main dish ingredients — potatoes — way more tender and delicious.

Here’s what you need: 700 g of potatoes, 1 red onion, a small bunch of green onions, 2 pickled cucumbers, 80 g of bacon, 120 ml of broth, 1 tbsp of sweet mustard, 1–2 tbsp of vinegar, 2 tbsp of vegetable oil, salt and black pepper to taste.

Boil the potatoes in their skins, let them cool slightly, and slice them into rounds. Fry the bacon until crispy. Slice the onion into thin half-rings and the cucumbers into small pieces.

For the dressing, mix warm broth, mustard, vinegar, and oil. Immediately pour the dressing over the warm potatoes, add the onion, cucumbers, and bacon, then gently toss. Before serving, sprinkle with green onions and let the salad rest for a while.
