Though pies have been long considered more of a dessert option after a lunch or dinner, at some point it turned into a certain dish option with all kinds of fillings for each taste. One of the most solid proofs is the famous chicken pot pie that became the classic recipes for many people living in the US.
The pie turns out hearty and extremely delicious when it’s filled with chicken and peas, so make sure you keep the recipe for the occasion.
Ingredients: 300 g of puff pastry, 700 g of chicken thighs (or breasts), 2–3 tbsp of olive or sunflower oil, 1/2 tsp of chicken seasoning, 1 onion, 2 cloves of garlic, 1 carrot, 40 g of butter, 3 tbsp of flour, 500 ml of chicken broth, 150 ml of 20% heavy cream, 1/2 tsp of salt, a pinch of black pepper, 1 bunch of fresh herbs, 100 g of frozen peas (no need to defrost), 1 egg yolk.
Season the meat with spices and salt, mix and leave to marinate for 30 minutes. Put the meat in a baking dish and bake in the oven for 30–45 minutes at 170°C. Once it’s cooked, shred the meat; you can cut it into medium-sized pieces.
Dice the onion and cut the carrots into small cubes; fry them in olive oil, then add butter and a little salt if you like. Add the flour to the pan and stir.
Pour the prepared broth into this mixture, stir, then add the cream, meat, and frozen peas; mix everything thoroughly. Wash the dill or other herbs, chop them, and add to the pan; stir.
Roll out the dough and cover the pan with it, make cuts, brush with egg yolk, and bake in the oven for 30–45 minutes at 180°C.
