With this recipe, you’ll get gorgeous, high-domed muffins with a cloud-soft interior every single time.

Even though baking perfect, bakery-style muffins with those signature tall domes might seem like a delicate science that requires professional pastry chef secrets, creating a comforting homemade breakfast is actually incredibly stress-free. Just give a try to this recipe and enjoy the best muffins of your life with whatever fresh or frozen berries you have on hand.

Here’s what you need: 250 g of flour, 200 g of sugar, 180 ml of milk, 100 ml of vegetable oil, 1 egg, 0.5 tsp of vanilla extract or vanilla sugar, 3/4 cup of berries, 2 tsp of baking powder, 0.5 tsp of salt

In one bowl, mix the flour, sugar, baking powder, and salt. In another bowl, combine the milk, egg, vegetable oil, and vanilla. Then pour the wet mixture into the dry ingredients and quickly stir with a spoon — there’s no need to overmix the batter, otherwise the muffins will lose their fluffiness.

At the very end, gently fold in the berries. Fill the muffin cups about two-thirds full with the batter and place them in an oven preheated to 180°C.

Bake for about 20–25 minutes until they have a beautiful golden top. The muffins turn out very tender and fragrant and are perfect with morning coffee or tea.
