A perfect fruity dessert for warm May days.

Even those who adore chocolate cakes and the sweetest desserts out there can agree that, during summertime, sweet treats containing fruits or light ingredients are more preferable than sugar bombs.

Luckily, the social media is full of recipes for those refreshing cakes you might have been looking for. This peach cake in particular is way easier to prepare than you might have thought, and only simplest ingredients are required.

Here’s what you need: 180 g of semolina, 70 g of flour, 2 eggs, 70 g of sugar, 230 ml of yogurt, 50 g of butter, 1 tsp of baking powder, 1/2 can of canned peaches.

Mix the semolina with yogurt and leave it for about 20 minutes to allow it to swell. In a separate bowl, beat the eggs with the sugar.

Add the egg mixture to the semolina, then stir in the flour and baking powder. Pour in the melted butter and mix the batter thoroughly.

Pour it into a baking pan and arrange peach slices on top. Bake for about 40–45 minutes at 165°C until golden brown.

Let the finished semolina cake cool slightly and, if you like, sprinkle with powdered sugar.
