If your usual rotation of mashed and boiled potatoes is starting to feel completely uninspiring, it is time to shift your focus to the Mediterranean. This Greek-style baked creation totally transforms the humble potato by pairing it with creamy, tangy feta cheese and a sharp kick of garlic.
As it bakes, the cheese melts into a rich, savory coating while the garlic infuses every single bite with incredible flavor. It turns out so hearty, golden, and deeply satisfying that you won't even worry about a main course — this dish easily steals the spotlight all on its own.
Here’s what you need: 2 large potatoes, 100 g of feta cheese, 50 g of Parmesan, 10 g of green onions, the same amount of dill, 1 clove of garlic, salt and ground black pepper to taste.
Peel the potatoes and garlic. Grate the Parmesan or any other cheese using a fine grater. Preheat the oven to 200°C.
Boil the potatoes in salted water. Mix the feta and grated cheese together, mashing them with a fork. Chop the dill and green onions. Add the chopped herbs to the cheese.
As soon as the potatoes are half-cooked, remove them and let them cool slightly. Cut the potatoes horizontally in half and scoop out the center of each half with a spoon. Add it to the cheese and herbs.
Mix the cheese, potato insides, and herbs until smooth, then season with pepper to taste. Spoon the filling into the potato halves.
Line a baking dish with parchment paper, arrange the stuffed potatoes in it, and bake for 15 minutes.
