The Mediterranean Secret: Why You Should Swap Butter for Olive Oil in Your Mashed Potatoes

We all know quite well that mashed potatoes go perfectly with whatever else you combine it with, be it meat or fish dishes. However, the European-style recipe has been a subject of talks for a while now, mostly due to its ingredient that makes the garnish even better in taste and richer in healthy elements.
In case you wondered how you could vary food routine without changing it radically, here’s an option.
Ingredients: 800 g potatoes (high starch variety), 50–70 ml of olive oil, 1 tablespoon of lemon juice, salt to your taste, black pepper to your taste, fresh herbs (parsley, basil) if you like. You can also add fried garlic green olives for a more specific Mediterranean taste.
Peel the potatoes, cut them into large pieces, and boil them in salted water until tender (15–20 minutes).
Drain the water and dry the potatoes slightly in a saucepan over low heat for 1–2 minutes.
Crush the potatoes with a potato masher until smooth.
Add olive oil and stir gently until creamy.
Pour in lemon juice, season with salt and freshly ground black pepper, and stir gently.
Serve hot, sprinkled with fresh herbs if you like.
