Even though old-school canned fish sandwiches have been the undisputed kings of festive party tables for decades, modern celebrations definitely deserve a fresher appetizer.

Instead of relying on heavy, traditional platters, serving a light and crowd-pleasing favorite is completely effortless — this colorful combination of creamy avocado, crisp bread, and bright seasonings is the ultimate way to get a gorgeous, healthy bite that your guests will be raving about all night.

Here’s what you need: 2 slices of bread, 1 avocado, 2 eggs, salt and pepper to taste.

Cut small pieces of plastic wrap or use small plastic bags, and place them in cups so that the edges hang over the sides. Carefully crack an egg into each one, season lightly with salt, then gather the edges of the plastic wrap and tie them closed.

Bring water to a boil in a pot and add the eggs; cook for about 2–3 minutes, then turn off the heat and leave them in the hot water for a little while longer so the whites set completely while the yolks remain runny.

Peel the avocado, remove the pit, and mash the flesh with a fork until creamy; add salt and pepper to taste. Spread the mixture onto the bread slices.

Carefully remove the poached eggs from the plastic wrap and place them on top of the sandwiches.

If you like, add a little more salt, pepper, and fresh herbs, then serve immediately.
