Ingredients: two chicken breasts, a sweet red bell pepper, 30 g of green onions, 80 g of hard cheese, two tablespoons of sour cream, two eggs, 2/3 teaspoon of salt, a mix of peppers, two tablespoons of cornstarch, vegetable oil for frying.
Cut the chicken breast into very small cubes. Do not mince it; keep it in cubes. Clean and dice the bell pepper into cubes of the same size. Finely chop the green onions and grate the cheese using a coarse grater.
Combine the chicken, bell pepper, green onions, and cheese in a bowl. Add the sour cream, egg, salt, and pepper mix, then stir in a tablespoon of cornstarch. The mixture should be sticky, not thick — as if you were kneading very dense dough. If it seems too runny, you can add another tablespoon of cornstarch.
Let the mixture sit for 10–15 minutes so the starch can tie up the juices.
Heat oil in a skillet, spoon the mixture into the pan, gently pressing it into shape. Cook for 3–4 minutes on one side until golden brown. Flip them over, reduce the heat to below medium, cover with a lid, and cook for another 4–5 minutes. The most important thing is to cook them through on the inside without drying them out.
