The Tiny Pasta Secret: How to Make Authentic Italian Pastina Soup with Mini Meatballs

Even though we all have our own collection of comfort food recipes, sometimes bringing some more diversity into it doesn’t sound like a bad idea.

For instance, if you were looking for some kind of new soup to prepare for your family, consider making Italian pastina soup — no exotic ingredients are required, and the taste is just unforgettable despite its simplicity.

Here’s what you need: 100 g of small pasta (orzo, star-shaped pasta, or ptitim), 250 g of minced meat, 1 onion, 3–4 cloves of garlic, 1 carrot, 1 stalk of celery, 40 g of grated Parmesan, 1.7 L of chicken broth, 2–3 tbsp of olive oil, salt, pepper, and a little oregano.

Finely dice the onion, garlic, carrot, and celery. Heat the oil in a pot and first gently fry the onion and garlic until softened, then add the remaining vegetables.

Once the vegetables are fragrant, pour in the broth and simmer until tender.

Add salt, pepper, and a pinch of oregano to the ground meat, mix well, and form small meatballs.

Add the pasta to the nearly finished soup, and after a minute, add the meatballs. Cook everything together for another 5–6 minutes, until the pasta and meat are done.

Before serving, sprinkle the soup with grated Parmesan and fresh herbs.
