Ingredients (for 3 portions): 2 lemons, 50 g of butter, 150 g of sugar, 2 eggs.
Zest the lemons. Then squeeze the juice from the lemons. Combine the juice and zest.
Add the sugar. Add the eggs. Mix everything together. Place the saucepan over heat. Bring the cream to a boil, stirring constantly; it will gradually thicken. Remove the saucepan from the heat.
Add the butter to the cream, it will start melting immediately. Stir it into the cream, then cover and let it cool completely.
Once cooled, the cream will thicken slightly. Whip the cream and use as you wish.
