Your life-saving recipe in case you’re too tired for cooking dinner after a hard day.

We all know this feeling when you have no desire to spend an hour preparing something for dinner, but also aren’t willing to wait for a restaurant takeout to be delivered to your house. In cases like this, even some of the ingredients you usually store in your kitchen can help.

For instance, the internet is full of recipes of pasta that goes well with pretty much everything — like salmon and some vegetables. In fact, this recipe might serve you even when you want to taste something exquisite and thus make your food routine more diverse.

Here’s what you need: 150–200 g of salmon or any lightly salted red fish, 200 g of fusilli, a handful of spinach, 150 g of cherry tomatoes, 120 g of cream cheese, 30–40 g of Parmesan, salt, black pepper and Italian herbs to taste.

Cut the salmon into cubes and place them in a baking dish; add the cherry tomatoes, spinach, and cream cheese, season with spices, and lightly salt. Bake in an oven preheated to 200°C for about 20 minutes; during this time, everything will come together into a delicate, creamy sauce.

Meanwhile, cook the pasta until al dente, making sure to reserve a little bit of the cooking water. Add the cooked pasta to the baked mixture, sprinkle with grated Parmesan, and mix well. Taste for salt and add more if needed. If the sauce is too thick, add a little of the reserved cooking water, it will make the texture perfectly creamy.
