The Ultimate Leftover Hack: How to Turn Yesterday’s Roast Chicken Into a 5-Star Chicken Salad Sandwich

One of the most delicious sandwiches is actually made of the simplest ingredients.

Though we used to consider them some kind of junk food, sandwiches can actually become healthy lunch or dinner options — if they’re made with right ingredients. One of the best examples is the famous chicken salad sandwich that became a legend across the Unites States and eventually reached other continents as well.

If you wondered whether to throw away that roast chicken left after family dinner, just don’t — instead, turn it into the most delicious sandwich of your life.

Here’s what you need: 2 chicken breasts, lemon slices, sprigs of dill, 5 tbsp of mayonnaise, 3 tbsp of Dijon mustard, 1 tbsp of wine vinegar, salt / pepper, 1 green apple, 1 stalk of celery, 1/2 of a red onion, a bunch of parsley, 2-3 green onion shoots, fresh bread, lettuce leaves.

Place two chicken breasts in a deep skillet, fill it halfway with water, and top with lemon slices and dill sprigs. Bring the water to a boil, reduce the heat, and simmer, turning the breasts occasionally, until they are cooked through. Cooking time can vary from 10 to 20 minutes.

While the chicken is cooking, mix 5 tbsp. of mayonnaise, 3 tbsp. of Dijon mustard, 1 tbsp. of wine vinegar, salt and pepper in a bowl. Then add 1 chopped green apple, 1 stalk of celery, and 1/2 of the red onion to the bowl.

Remove the chicken, let it cool, chop it into small pieces, and add it to the sauce and vegetables.

Chop a bunch of parsley and 2–3 green onions, then add them to the salad. Mix everything together, taste, and season with salt and pepper (if necessary).

Slice some fresh bread, place salad leaves on top, and then add the chicken salad. Enjoy!
