The Ultimate New York Style Coffee Cake: Extra Crumble, Extra Flavor
The most delicious cake will be ready in less than an hour — serve it with, well, coffee.
Despite quite many desserts having become legendary over the years, some basically reached the status of local legends. In the US, this also concerns the famous coffee cake that doesn’t require exceptional baking skills nor exotic ingredients. If you felt like you needed something sweet for your morning or mid-day coffee, here’s a perfect solution.
Ingredients (all of them should be at a room temperature!): 2 eggs (medium), 110 g of butter (softened), 1 cup (250 ml) of buttermilk/yogurt/sour cream, 1 cup of sugar (250 g), 0.5 tsp of baking soda, 1 tsp of baking powder, vanilla extract or vanilla sugar, a pinch of salt, 2 cups of flour (250 ml per cup).
For the filling: ¼ cup of brown sugar (preferably), 2 tbsp of flour, 1 tsp of cinnamon, 250 g of chopped roasted nuts.
Combine all the dry ingredients—sifted flour, baking soda, baking powder, salt, and vanilla extract. Simply stir with a whisk.
Cream the butter and sugar together. Add the eggs one at a time, beating well after each addition.
Add the dry flour mixture and knead the dough. Grease the pan with butter.
Mix the filling: flour, cinnamon, and sugar.
Spread the first layer of dough. Smooth it out with a spatula or silicone scraper. Sprinkle with half of the filling and nuts. Cover with the second layer of dough. Sprinkle with the remaining filling and nuts. If the dough is difficult to smooth, you can dampen the spatula or scraper with water.
Bake in a preheated oven at 180°C for 40–45 minutes.
