The Ultimate Summer Crunch: This 5-Minute Cucumber & Onion Salad Is the Most Refreshing Side Dish Ever

Though summer is still several months away, warm sunny days can already boost our mood enough to prepare something light and refreshing as a side meal or rather main dish.

One of favorite recipes for the summer time is this cucumber salad that can be made in just five minutes, which is convenient if you’re running out of time before your guests arrive. Also, consider including this salad in your meal routine if you’re thinking about losing a couple of kilos ahead of summer.

Here’s what you need: 300 g of fresh cucumbers, 80 g of red onion, 5 g of fresh dill, 2 tablespoons of vegetable oil, 1 tablespoon of apple cider vinegar, 1 teaspoon of sugar, 1–2 pinches of salt (to your taste), ground black pepper.

First, make the salad dressing. In a usual bowl or deep salad bowl, combine the sugar, salt, ground black pepper, vegetable oil, and apple cider vinegar, then stir until smooth.

Trim the ends off the cucumber and slice it into thin rounds. Peel the onion and slice it into thin half-rings. Rinse the dill, pat dry, and chop finely with a knife. Place the thin cucumber slices, onion, and dill into the bowl with the prepared dressing, and mix well.

Cover the bowl with plastic wrap and place in the fridge for 30 minutes.
