Most of us think of plant-based milk as a modern healthy trend, but this traditional Spanish-style drink has been a beloved street-food staple in Mexico for centuries.

The good news here is that it’s also easy to make at home with simplest ingredients — this sweet and creamy combination of rice, rich milk, and aromatic cinnamon is the perfect way to get a refreshing treat you’ll definitely want to repeat.

Here’s what you need: 240 g of long-grain white rice, 2 cinnamon sticks, 960 ml of water, 360 ml of milk, 2 teaspoons of vanilla extract, 70–100 g of sugar, 2 teaspoons of ground cinnamon.

Place the rice and cinnamon sticks in the blender jar, then add half the water. Blend for 2 minutes, until the cinnamon and rice are ground into coarse crumbs.

Pour the remaining water into the jar and blend for another 2 minutes. Pour the mixture into a container, cover it, and let it rest at room temperature overnight.

Strain the rice mixture through a fine-mesh sieve, add milk, vanilla extract, and sugar to taste, then stir. Serve the horchata with ice and sprinkle ground cinnamon on top.
