After a long day, you want a dinner that feels like a reward but doesn't require an hour of standing over a hot stove. This lightning-fast, one-pan pork stir-fry is a total lifesaver, delivering juicy meat, crisp veggies, and a rich, savory soy sauce glaze in just 15 minutes.

Because everything flash-cooks over high heat with fresh ginger and garlic, it locks in a massive amount of punchy flavor with practically zero effort. Spoon it over a steaming bed of rice, noodles, or whatever you have in the pantry, and you've got a killer comforting meal that obliterates your usual weeknight routine.

Here’s what you need:

The Protein: 10 oz (300g) of pork (cut thin).

The Aromatics & Veggies: 1.5 oz (35–40g) of fresh ginger, 4 cloves of garlic, 1 small bell pepper (150g), 1 medium yellow onion (200g), and 2 celery stalks (200g) — if you don't have celery, carrots work perfectly too!

The Fast Glaze & Seasoning: 1 tablespoon of tomato paste, 3 tablespoons of soy sauce, 1 tablespoon of all-purpose flour (to thicken the sauce), 1 teaspoon of dried herbs, 1 teaspoon of smoked paprika, salt and black pepper to taste, 1 cup (200ml) of water, and oil for high-heat frying.

The Effortless Routine

To make slicing a breeze, pop your meat in the freezer for a few minutes to firm up, then cut it into thin, bite-sized strips. Thinly slice the ginger and garlic into flat coins. Slice your bell pepper and celery into matching matchsticks, and cut the onion into clean half-moons.

In a small bowl, whisk together the tomato paste, soy sauce, dried herbs, smoked paprika, and flour. Pour in the water and stir vigorously until the sauce is completely smooth and free of flour lumps.

Get a large skillet or wok screaming hot with a splash of vegetable oil. Toss in your sliced ginger and garlic, flash-frying them for just under a minute until your kitchen smells incredible.

Add the pork strips straight into the pan and stir-fry over high heat for about 4 to 5 minutes until browned, then transfer the meat to a clean plate. Toss all your prepped veggies into that same hot pan and stir-fry them for another 4 to 5 minutes so they stay nice and crisp-tender.

Dump the pork back into the pan with the veggies, give it a quick toss, and pour your prepared sauce right over everything. Keep stirring constantly over high heat for another 4 to 5 minutes without a lid. The sauce will bubble up and thicken into a gorgeous, glossy glaze that coats every single piece.
