By taking a sheet of ready-made puff pastry and layering it with juicy tomato slices, a heavy handful of sharp cheese, and a massive bunch of fresh green onions, you create a spectacular, high-reward snack that completely eclipses any frozen pastry box.
Ingredients: 250 g of puff pastry, 150 g of tomatoes, 80 g of hard cheese, 40 g of grated Parmesan, 50 g of green onions, 40 ml of olive oil, 5 g of garlic, 3 g of Provençal herbs, 1 egg yolk, 2 g of salt, 1 g of black pepper.
Defrost the puff pastry in advance and roll it out slightly. Dice the tomatoes into small cubes, grate the hard cheese using a coarse grater, and finely chop the green onions. Mix the olive oil with the minced garlic and Provençal herbs.
Cut the dough into rectangles, lightly brush with the flavored oil, and spread the tomato, cheese, and green onion filling over the dough, leaving the edges free. Sprinkle with Parmesan on top and season lightly with salt and pepper.
Fold the edges of the dough over to prevent the filling from leaking out during baking. Brush the pastries with egg yolk and bake at 200°C for about 20–25 minutes until golden brown.
