If you are looking for a fast and healthy way to start your day, this protein-packed skillet is exactly what you need. Melting cottage cheese directly into your scrambled eggs creates an incredibly creamy texture, while fresh tomatoes, spinach, and a sprinkle of seeds add the perfect pop of color and crunch.

Ingredients for one serving: 2 large eggs, ¾ ounce of fresh spinach, 3.5 ounces of cottage cheese (around 5% fat), 1 ounce of Suluguni cheese (or any good melting cheese like mozzarella), 1 fresh tomato, 1 tablespoon of sunflower oil, a sprinkle of your favorite salad seed mix, and salt and black pepper to taste.

To start, place a skillet over medium heat and lightly coat it with the oil. Spread the cottage cheese in an even layer across the bottom of the pan and let it fry undisturbed for about one minute until it warms through and starts to soften. Toss in your chopped spinach, season with salt and black pepper, and cook for another minute while stirring everything together with a spatula.

Crack the eggs directly into the pan and quickly scramble them right into the warm cottage cheese mixture until fully combined. As soon as the eggs begin to set, sprinkle the grated Suluguni cheese and your seed mix all over the top.

Finish it off by layering thin slices of fresh tomato over the eggs. Let the skillet sit on the heat for one final minute until the cheese is beautifully melted, then remove it from the stove and dig right in.
