This Easy Crispy Potato Recipe Is Better Than Regular French Fries

These golden, pan-fried potatoes are the ultimate quick comfort food for a family dinner. They take just 20 minutes to cook and taste incredible with the simple homemade onion dip.
Here’s what you need: 1.1 lbs (500g) of potatoes, 1 tablespoon of all-purpose flour, 3 tablespoons of vegetable oil, salt to taste, and a small bunch of fresh dill.
For the onion sauce: ⅔ cup (150g) of sour cream, 1 small onion, 2 cloves of garlic, 1.5 tablespoons (20g) of butter, a small bunch of fresh dill or parsley, and black pepper to taste.
Peel your potatoes and cut them into even wedges or thick fries. Rinse them thoroughly under cold water to remove any extra starch, then pat them completely dry with paper towels. Put the dry potatoes in a bowl, season with salt, sprinkle the tablespoon of flour over them, and toss gently until each piece has a very thin, even coat.
Heat the vegetable oil in a large skillet over medium-high heat. Fry the potato wedges in a single layer — working in batches if your pan is small — turning them occasionally until they have a beautiful, uniform crunchy crust.
While the potatoes are frying, finely dice the onion and cook it in a small pan with the butter until it is soft, sweet, and lightly golden. Stir in the minced garlic and cook for just 1 more minute until fragrant, then remove from heat and let it cool slightly.
Mix the cooled onion and garlic directly into the sour cream, stir in the finely chopped herbs, and add a pinch of black pepper. Pile the hot, crispy potato wedges onto a plate, garnish with fresh dill, and serve them immediately with the creamy onion dip on the side.
